Kera's Kicked Up Chicken Noodle Soup
Ingredients:
- 1 28oz can crushed tomatoes
- 1 28oz can diced tomatoes
- 2 32oz containers of chicken stock
- 3 large carrots
- 4 celery stalks
- 1 large onion
- 2 bay leaves
- 1 tablespoon italian seasoning
- 1 tablespoon chili powder
- 2 tablespoons ground pepper
- 8oz / half a box orzo
- 3-4 cups shredded rotisserie chicken
First chop the celery, carrots and onions into small, same size pieces, then saute the veggies in a stockpot with a small amount of olive oil with the bay leaves and pepper until tender. You may need to add a little water. Once tender add the 2 cans of tomatoes and 1 box of chicken stock. Let it simmer for about 20min then add the chicken and more stock if needed. It can simmer as long as you want. Once you are almost ready to eat toss in the orzo. You don't want it to go in to early or it will be mushy.
Serve with a warm crusty bread, perfect dunking!
