This sweet potato casserole is easy and you can't mess this up.
THE GROCERY LIST:
- 8 good sized sweet potatoes
- Butter 1/4 stick
- Brown Sugar 1/4 c
- Nutmeg
- Pint of heavy cream
- Bag of mini marshmallows
- Big sugar crystals
Peel and boil the sweet potatoes until they are mushy. Drain well, pat dry and get as much of the moisture out as you can. Now put them in a large mixing bowl, mash them! I use my kitchen aid mixer but a hand mixer is fine too. Add the butter, brown sugar, 1/2 teaspoon nutmeg, start with 1/4 c heavy cream but drizzle it lightly while mixing. You may not need it all. The consistency should be that of a traditional smooth mashed potato. These are my preferences but you may add more brown sugar if you desire. Put that entire mixture into a oven safe sprayed baking pan that fits the mixture. Top with the marshmallows to your liking, bake at 350 for maybe 20 minutes. Just so you know its hot and the marshmallows are melting. Slide out and now sprinkle the sugar over the top and broil until golden and gooey.
SO DELISH ! Almost a desert and I have been known for using it for desert with a little vanilla ice cream .
