Kera’s Salty Goodness For St Patrick’s Day!
Here’s how Kera makes this traditional St Patty’s day dinner, how do you cook yours?
Always the crockpot !! 2 corned beef packages, I prefer the flat. The flat cooks evenly and is proportioned nicely .
Pop them both in an empty crock, add the packets of seasoning that come with it and then ... 2 cans of 🍻 any beer but not dark ! Add 4 garlic cloves with a rough chop, 1 cinnamon stick, 2 star anaise, about 4 tablespoons pink peppercorns, 4 bay leaves and about 2 tablespoons fresh ground black pepper. Add 1 can chicken stock ... let her go on high 5 hours, drop to low for another 4 hours. Do not add any salt BOOM DONE!
As for the potatoes, carrots and cabbage. I peel and boil carrots and potatoes in some salted water until fork tender. Total amount of your choosing. I use 2 heads of cabbage 🥬 cut into chunks/strips, chuck in the crock pot with meat with an hour and a half to go . So easy !!
Serve with different mustard variety’s and white vinegar.
